Made in a small mountaintop dairy cooperative in northern Tuscany, the Cacio di Bosco is a gem among truffled cheeses. The Bosca is a fantastic cheese to begin with that is then piled high with a strong truffle flavour and smell. It is easily among Italy’s best flavoured cheeses. The truffle flavour doesn’t overwhelm the goodness of the cheese; rather, the ingredients blend together superbly, making for a beautiful balance between garlicky truffle and nutty, sweet, almost caramelized aged sheep’s milk. This delicious cheese is firm, smooth, and oily, dotted with big flecks of truffle.
