Eggplant with Fig & Leek

1 large eggplant
2 cloves of garlic
1 large ball of mozzarella Buffal
15 cm piece of leek
1 fig
some cherry tomatoes
oil
4 tablespoons of balsamic vinegar
1 tablespoon sugar

Cut the eggplant deep in the box, being careful not to cut the skin. The incision arrange the cloves of garlic. Brush it with olive oil, place on a baking tray and bake for 40 minutes at 200 degrees. In the meantime, preheat the pan 3 tablespoons of olive oil and fry on it halved cherry tomatoes. Throw in a moment's time, and fry gently posól only for a moment, until slightly softened. Remove from the heat and set aside. In a pot place the vinegar and sugar. Bring to the boil and reduce vinegar to a thick syrup.

Place the baked eggplant on pieces of mozzarella Buffal, all fill with leeks, tomatoes, leeks and fresh figs. So put the prepared eggplant for five minutes in the oven to slightly podtopiła mozzarella and warmed ingredients. Finished eggplant balsamic reduction drizzle. You can sprinkle fresh whole leeks and drizzle lightly with olive oil. Serve immediately. Enjoy your meal
