Mary's Double-Baked Potatoes

Take a knife and poke some slits into whole baking potatoes. Place your potatoes in the over and bake for a little over one hour until soft throughout.

Take the potatoes out of the oven and cut an oval shaped hole in the top side of the potato, discard the skin from this and scoop the insides into a bowl.

Once you have done this with all of your potatoes mash the potato with milk, sour cream, a scoop of cream cheese, butter, sliced shallots, cooked sliced maple bacon, shredded cheddar cheese. Mix together by hand or with a small electric mixer until smooth.

Scoop the potato mixture back into the potatoes. Top with cheese, bake in the oven for 10 minutes until the potatoes are heated throughout and the cheese on top has melted. You will end up with more mixture than room in the potatoes due to all the extra ingredients which will make for a nice snack :-)

Pre-made some for a camping trip. Wrapped them in foil and heated them up on the fire. They were a big hit.
