Falafel Recipe

Falafel Recipe

2/3 cup dried chickpeas*
1/4 onion cut into chunks
2 tbsp fresh parsley
2 cloves garlic
1 tsp baking powder
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp fine sea salt

Place chickpeas in a bowl and cover with at least 2 inches of cold water. Refrigerate overnight.

*If you con't have dried chickpeas, you can substitute with one 15 ounce can of chickpeas, drained, plus 1/4 cup of whole-wheat flour.

Add everything to a food processor and pulse to a grainy paste. Shape paste into 12 golf ball size rounds.

Coat a large nonstick skillet with cooking spray and heat on medium-low. Working in batches (do not overcrowd the skillet) add balls and use a spatula to flatten to about 1/2 inch thick. Cook until browned on bottom (4 - 5 min). Flip and brown the other side.
