Par boil (suggested Maris piper) potatoes for 10 min. in salted boiling water. Drain, toss in colander to fluff edges.

Add extra virgin olive oil in roasting tray, or buter for slightly thicker, sweeter crunch.

Add par boiled potatoes in roasting tray in single layer, season with salt and pepper. Bake for 30 min. at 375 degrees until lightly golden.

Remove from oven and squash with potato masher.

In bowl, coat rosemary with drop of olive oil and splash of vinegar, add garlic cloves to rosemary.

Spread mixture on potatoes and bake for another 25 - 30 minutes, to your liking.

Other suggested herbs: thyme, bay and garlic or sage, garlic and clementine zest.
