Peruvian Pisco Sour

INGREDIENTS

3 ounces peruvian Pisco
2 ounces key lime juice (called green lemons in Peru)
1 tablespoon egg white
1 1⁄2 ounces simple syrup
1⁄4 cup crushed ice
2 -3 drops Angostura bitters

In a blender, combine key lime juice with the egg white.
Add simple syrup, pisco, and ice and blend at high speed until frothy. (or put everything in a cocktail shaker with ice)
Pour into a sour glass, top with a few drops of bitters and serve. (could top with cinamon

Maple syrup simple syrup

Ratio = 0.75 parts of maple syrup to replace 1 part sugar. For cocktail mix this means 0.75 parts maple syrup to 1 part water (i.e. add 0.75 cups of maple syrup to 1 cup of water in order to replace the traditional 1 cup of water and 1 cup of sugar).
